This is a quick side dish. Eggplant goes so well with miso and green capsicum adds bright colour to the dish. My recipe uses thinly sliced pork but you can make it without meat. Then it becomes a vegetarian dish.

Miso Stir Fry with Eggplant, Capsicum and Pork

The combination of rice, daikon (white radish) and aburaage (fried thin tofu) in daikon gohan is just perfect. This is another mixed rice recipe similar to Shimeji Gohan (rice with Shimeji Mushrooms) but the soy sauce flavour of the rice is slightly stronger. Use konbu dashi stock to make it 100% vegetarian.

This is a quick stir fry dish that originated in China. Beef, green pepper (capsicum) and bamboo shoots are cut into thin strips and cooked in soy flavoured sauce with a touch of oyster sauce.

This is an elegant looking dish suitable as an appetiser or a side dish. Steamed lotus root balls are made of grated lotus roots mixed with prawns (shrimps), gingko nuts and green peas.

Tataki kyuri is a simple but unique cucumber salad. By smashing the cucumbers, the dressing penetrates into each piece. Ginger and soy sauce in the dressing gives this salad a Japanese touch.

Hiyashi chūka is made with cold Chinese-style egg noodles, with sweet vinegar sauce and topped with vegetables, egg and ham. It is a great dish to have on a hot summer day.

Gomoku Gohan (Japanese Mixed Rice) is rice cooked in seasoned dashi stock with 5 vegetables. You can almost eat the rice by itself without any other dishes!

Goma-ae (胡麻和え) is a side dish made with vegetables and sweet sesame dressing. This is a pure vegetarian dish and very quick to make. The dressing has the full flavour of sesame with a little bit of sweetness and it goes so well with the slight bitterness of chrysanthemum leaves.

A very popular Chinese dish, Happosai (Combination Stir Fry) is not modified very much from the original Chinese version. It is made with lots of vegetables, meat and seafood coated with a thick flavoursome sauce.

The flavour of Simmered Chicken and Vegetables, Chikuzenni, is a typical combination of dashi, soy sauce, mirin, sake and sugar but the ingredients are stir-fried first so the dish is much richer than other simmered dishes.

Sweet and sour pork usually uses cubed pork but this is a meatball version of sweet and sour pork. Onions in the meatballs give the meat more flavour and the sauce is not as strong as original Chinese sweet and sour pork.

Kakiage is a type of tempura made with a variety of vegetable strips, often with seafood. This is a popular home cooking dish as it uses leftover vegetables to clean up the fridge for the week.
