Vegetables

One of my favourite hot pots, yosenabe (寄せ鍋) is packed with seafood, chicken and vegetables. Unlike shabushabu, you don’t need dipping sauces because yosenabe is cooked in flavoured soup. You can cook it all on the stove and serve, or let people cook piece by piece at the table for entertainment.

Tonjiru (豚汁) is a hearty miso soup with pork slices and vegetables. Packed with loads of vegetables and a small amount of pork, tonjiru is quite filling but you will be surprised to know the calories in tonjiru are low. It is considered to be a winter dish in Japan but I can't see why we shouldn't have it all year round. It's delicious.

A super easy Japanese stir fry from Okinawa, goya chanpuru is full of bonito flakes, which is unique for a stir fry dish and so flavoursome that you will get addicted to it. It is not greasy at all and my version is made with pork slices instead of SPAM which is the real version of goya chanpuru.

Japanese potato salad is like semi-mashed potatoes mixed with vegetables, ham, egg and mayonnaise. Small pieces of carrots, cucumbers, onions, ham and eggs make it visually appealing. It is not too creamy, not too rich, but flavoursome. What makes this potato salad stand out is the mushy texture and the famous Japanese mayonnaise, Kewpie mayonnaise.

Karashiae dressing is a Japanese mustard dressing which is made with mustard, soy sauce and dashi stock. It has a kick of hot mustard but is quite light as it does not use oil at all unlike most Western salad dressings. I used broccolini today but you can use other vegetables.

Okonomiyaki is the famous Japanese savory pancake that is usually cooked at the dining table so you can customize it to your taste.

Lovely pattern of sliced lotus root with decorative mizuna leaves make this salad very attractive. And sesame sauce dressing makes it a perfect salad. Crunchiness of lotus root, mild peppery flavour of mizuna, lovely aroma of sesame.... It is such a simple salad to make but so yummy.

Sliced celery is simply marinated in salty water with a touch of citrus and chilli. Excellent side dish. Simple Pickled Celery is a great way of using up left over celery.

Yudofu is a very simple tofu dish which is perfect to eat on a cold day. Hardly any preparation is required.
