an-fried eggplant topped with sweet miso sauce, Miso Grazed Eggplant (Nasu Dengaku) is a very simple side dish or appetiser. Sweet miso goes so well with eggplant, which melts in your mouth.

Japanese fish cakes are made in a similar way to Thai fish cakes but the flavourings are less spicy and use common Japanese seasonings. Unlike typical Western-style fish cakes, they do not use flour or mashed potatoes to bind the fish together.

Japanese Fried Fish Cakes (Satsuma Age)

A simple braised white radish (daikon) becomes a surprisingly tasty dish when cooked in a thick soy flavoured sauce with pork mince (ground pork). The daikon is cooked until it becomes semi-transparent and tender. The meat sauce has a typical Japanese flavour with dashi, soy sauce, sake, mirin and sugar.

Scrambled Tofu is a delicious vegetarian side dish. Or perhaps you could call it a warm salad. It is a typical home cooking dish and quite simple to make.

? The meatloaf is flavoured with miso, soy sauce and sugar so it is quite different from the Western style meatloaf. It looks fiddly but actually, it is quite simple to make. Great as finger food or an accompanying side dish for a Japanese meal.

When bite size pieces of deep fried fish are marinated in slightly sweet vinegar and soy based sauce with plenty of shredded vegetables, it transforms the fish into something totally different.

Nanbanzuke (Marinated Fried Fish)

Goma-ae (胡麻和え) is a side dish made with vegetables and sweet sesame dressing. This is a pure vegetarian dish and very quick to make. The dressing has the full flavour of sesame with a little bit of sweetness and it goes so well with the slight bitterness of chrysanthemum leaves.

Agedashi Tofu (or Agedashi Dofu) is one of the a-la-carte dishes you always find on the menu at Japanese restaurants. It is delicate and simple but so yummy. The sweet soy sauce-based dashi goes so well with deep fried tofu.

Gomoku-mame (五目豆, Simmered Soybeans with Vegetables) is a wonderful, healthy vegetarian dish. Soybeans are cooked with diced root vegetables in a sweet soy sauce flavour. It keeps well for several days in the fridge and you can freeze it, too.

Nuta (ぬた or 饅) is a miso and vinegar based dressing. It is made with miso, vinegar and sugar, with or without Japanese mustard. One of the representative nuta is tuna and shallots (scallions) nuta. It is a great accompaniment for drinks, particularly sake. Miso dressing goes well with many different ingredients and you can be creative.

The typical egg dish in Japanese cuisine, dashimaki tamago (出し巻き卵, Japanese rolled omelette) is made by rolling thin layers of egg in the frypan. The beautiful layers of the egg when sliced, and the sweet dashi flavour make this omelette so unique.

Sliced celery is simply marinated in salty water with a touch of citrus and chilli. Excellent side dish. Simple Pickled Celery is a great way of using up left over celery.
