Japanese Beef bowl (Gyū-don) is a popular one-bowl dish that consists of a bowl of rice topped with thinly sliced beef and onions simmered in sweet soy-flavoured sauce. It is so quick to make, tasty and filling – a perfect mid-week family meal.

This is not just a simple bowl of udon noodles but curry flavoured noodles with pork, shallots (scallions), aburaage (deep fried tofu) and fish cakes. I made the curry sauce from scratch and flavour is amazing – almost noodle restaurant quality.

The combination of rice, daikon (white radish) and aburaage (fried thin tofu) in daikon gohan is just perfect. This is another mixed rice recipe similar to Shimeji Gohan (rice with Shimeji Mushrooms) but the soy sauce flavour of the rice is slightly stronger. Use konbu dashi stock to make it 100% vegetarian.

This is a quick Ramen recipe using store bought soup and noodles, but the toppings are homemade. With a little bit of effort to make good toppings, you can enjoy great ramen almost like the ones you order at restaurants.

Hiyashi chūka is made with cold Chinese-style egg noodles, with sweet vinegar sauce and topped with vegetables, egg and ham. It is a great dish to have on a hot summer day.

Gomoku Gohan (Japanese Mixed Rice) is rice cooked in seasoned dashi stock with 5 vegetables. You can almost eat the rice by itself without any other dishes!

Katsu-don (カツ丼), is a very filling main dish. A bowl of rice topped with tonkatsu (deep fried crumbed pork cutlet), onion and beaten egg, cooked in dashi with sweet soy sauce.

Zosui (雑炊) is a Japanese version of congee. Rice is cooked in flavoured soup with vegetables, egg and sometimes meat or fish. It is often made using the soup from the hot pot to wrap up the wonderful meal of the day. You can imagine how good the soup from the hot pot would be, can’t you?

Oyako-don (Chicken and Egg on Rice)

Zaru soba (cold soba noodles) is the best way to eat soba (buckwheat) noodles. Zaru soba is the simplest form of eating noodles and so fast to make. It is a popular summer dish in Japan of course but if you want to be like a connoisseur and enjoy the soba itself, then eat cold even in winter. Use konbu dashi to make it a perfect vegetarian dish.

Home-made temakizushi (手巻き寿司) looks fancy but is very easy to prepare Cut the sushi fillings, display everything on the table and let the crowd serve themselves. It is fun and great for a little party with family and friends.

Nothing is more comforting than onigiri (おにぎり, Japanese rice ball) wrapped in yaki nori (roasted seaweed sheet) with salted grilled salmon inside the rice! It’s such a simple food but it is so yummy that you can’t stop eating. Instead of salmon or other popular protein, you can add pickled vegetables or pickled salty plum to make it 100% vegetarian.

Yakisoba (焼きそば) is the Japanese version of stir fry noodles. Noodles are cooked with sliced pork and plenty of vegetables - cabbage, bean sprouts, carrots, onion and shallots / scallion, then coated with special sauce. Yum!

The Japanese version of steamed dumpling, shumai (or shao mai) is quite easy to make. It only contains pork mince, onion and few typical Japanese seasonings, but it tastes so good.

Yakitori is a Japanese skewered chicken, cooked on a griller with either sweet soy sauce or just salt. You don't marinate chicken! Great for entertaining a big crowd as it is a kind of finger food. It is so tasty and easy to eat that you would not realise you ate so many skewers of chicken!
