Pork Marinated in Sake Lees (Pork Kasuzuke)

A simple braised white radish (daikon) becomes a surprisingly tasty dish when cooked in a thick soy flavoured sauce with pork mince (ground pork). The daikon is cooked until it becomes semi-transparent and tender. The meat sauce has a typical Japanese flavour with dashi, soy sauce, sake, mirin and sugar.

This is not just a simple bowl of udon noodles but curry flavoured noodles with pork, shallots (scallions), aburaage (deep fried tofu) and fish cakes. I made the curry sauce from scratch and flavour is amazing – almost noodle restaurant quality.

This is a quick side dish. Eggplant goes so well with miso and green capsicum adds bright colour to the dish. My recipe uses thinly sliced pork but you can make it without meat. Then it becomes a vegetarian dish.

Breaded, deep fried crispy pork cutlet is one of the top 10 favourite dishes among Japanese people. Quite easy to make and served with a sweet fruity sauce, it is so delicious. Tonkatsu is also the main ingredient in Katsudon.

Yakibuta (Braised Pork) is a large piece of pork cooked in soy sauce flavoured sauce over a couple of hours. It takes time to cook but it is quite simple to make. The meat is so tender and flavoursome.

Hiyashi chūka is made with cold Chinese-style egg noodles, with sweet vinegar sauce and topped with vegetables, egg and ham. It is a great dish to have on a hot summer day.

A very popular Chinese dish, Happosai (Combination Stir Fry) is not modified very much from the original Chinese version. It is made with lots of vegetables, meat and seafood coated with a thick flavoursome sauce.

Katsu-don (カツ丼), is a very filling main dish. A bowl of rice topped with tonkatsu (deep fried crumbed pork cutlet), onion and beaten egg, cooked in dashi with sweet soy sauce.

Mabodofu (麻婆豆腐) is the Japanese name for “Mapo Tofu”, which is a Chinese dish from Sichuan province. Tofu and ground meat are stir fried with a flavoursome sauce. But the flavour of mabodofu is yet again modified to suit to the Japanese palette and not as spicy as the Chinese version of mapo tofu.

Sweet and sour pork usually uses cubed pork but this is a meatball version of sweet and sour pork. Onions in the meatballs give the meat more flavour and the sauce is not as strong as original Chinese sweet and sour pork.
