Japanese kids’ favourite dish, omurice (Japanese Rice Omelette) is another Western-influenced Japanese dish. It is basically an omelette with ketchup-flavoured chicken fried rice inside it.

Katsu-don (カツ丼), is a very filling main dish. A bowl of rice topped with tonkatsu (deep fried crumbed pork cutlet), onion and beaten egg, cooked in dashi with sweet soy sauce.

One of the few Japanese dishes that is eaten with a spoon, Chawanmushi is the appetiser that is almost always served in Kaiseki ryori. The egg is mixed with dashi, soy sauce, mirin and salt, then carefully steamed with various ingredients in it. The texture of the egg custard is so smooth and delicate.

Oden is a kind of hot pot consisting of daikon, potatoes, eggs, Konbu (kelp), konnyaku, and different types of fish cakes, simmered in lightly flavoured soup stock.

Zosui (雑炊) is a Japanese version of congee. Rice is cooked in flavoured soup with vegetables, egg and sometimes meat or fish. It is often made using the soup from the hot pot to wrap up the wonderful meal of the day. You can imagine how good the soup from the hot pot would be, can’t you?

A super easy Japanese stir fry from Okinawa, goya chanpuru is full of bonito flakes, which is unique for a stir fry dish and so flavoursome that you will get addicted to it. It is not greasy at all and my version is made with pork slices instead of SPAM which is the real version of goya chanpuru.

Japanese potato salad is like semi-mashed potatoes mixed with vegetables, ham, egg and mayonnaise. Small pieces of carrots, cucumbers, onions, ham and eggs make it visually appealing. It is not too creamy, not too rich, but flavoursome. What makes this potato salad stand out is the mushy texture and the famous Japanese mayonnaise, Kewpie mayonnaise.

The typical egg dish in Japanese cuisine, dashimaki tamago (出し巻き卵, Japanese rolled omelette) is made by rolling thin layers of egg in the frypan. The beautiful layers of the egg when sliced, and the sweet dashi flavour make this omelette so unique.
