Steamed Rolled Chicken with Soy Sesame Sauce

Tofu mixed in the meat makes the patties bouncy and soft. Flavoured with miso and soy sauce, these chicken patties don’t need sauce to go with them. Shiso (perilla) leaves wrapped around the patties decorate them and give an extra Japanese touch to the dish.

? The meatloaf is flavoured with miso, soy sauce and sugar so it is quite different from the Western style meatloaf. It looks fiddly but actually, it is quite simple to make. Great as finger food or an accompanying side dish for a Japanese meal.

This is a white coloured stew made from béchamel sauce. It’s so colourful with the chicken, carrots, potatoes, onions and green peas in it. This stew is also called ‘Cream Stew’ although no cream is added to the sauce and it is not as heavy as it might look.

The flavour of Simmered Chicken and Vegetables, Chikuzenni, is a typical combination of dashi, soy sauce, mirin, sake and sugar but the ingredients are stir-fried first so the dish is much richer than other simmered dishes.

One of my favourite hot pots, yosenabe (寄せ鍋) is packed with seafood, chicken and vegetables. Unlike shabushabu, you don’t need dipping sauces because yosenabe is cooked in flavoured soup. You can cook it all on the stove and serve, or let people cook piece by piece at the table for entertainment.

Shimeji mushrooms and chicken are cooked in rice with flavoured Dashi stock. It has great flavour and you can eat Shimeji Gohan by itself without any dishes! Using sticky rice makes the texture of rice so special.
