Mixed Vegetable Salad Dressing

Very simple but refreshing salad that takes no time to make. Salty and sour pickled plum adds a unique flavour to the dressing, which goes so well with Daikon Salad.

I call it ‘salad’ as that’s how Westerners recognise it but this is a simmered dish, usually served at room temperature. Hijiki Seaweed Salad can be made ahead of time and served as a side. It is also a popular food to include in a bento box.

Scrambled Tofu is a delicious vegetarian side dish. Or perhaps you could call it a warm salad. It is a typical home cooking dish and quite simple to make.

Tataki kyuri is a simple but unique cucumber salad. By smashing the cucumbers, the dressing penetrates into each piece. Ginger and soy sauce in the dressing gives this salad a Japanese touch.

Japanese potato salad is like semi-mashed potatoes mixed with vegetables, ham, egg and mayonnaise. Small pieces of carrots, cucumbers, onions, ham and eggs make it visually appealing. It is not too creamy, not too rich, but flavoursome. What makes this potato salad stand out is the mushy texture and the famous Japanese mayonnaise, Kewpie mayonnaise.

Karashiae dressing is a Japanese mustard dressing which is made with mustard, soy sauce and dashi stock. It has a kick of hot mustard but is quite light as it does not use oil at all unlike most Western salad dressings. I used broccolini today but you can use other vegetables.

Lovely pattern of sliced lotus root with decorative mizuna leaves make this salad very attractive. And sesame sauce dressing makes it a perfect salad. Crunchiness of lotus root, mild peppery flavour of mizuna, lovely aroma of sesame.... It is such a simple salad to make but so yummy.

Spinach ohitashi salad is a very simple dish as a side or substitute for salad. Simply boil and serve with bonito flakes topping, or sesame seeds if vegetarian.

The most popular combination of Sunomono (vinegar Dressing) is this cucumber and Wakame seaweed. Simple to make and delicious.
