The texture of these Home-made Udon Noodles is no comparison to those fresh noodles you buy from the shop. The noodles are chewy and springy, and they taste great! You need to use a bit of arm muscles to knead the dough but making Udon Noodles requires no special skills and it is so worth it.
The ingredients are just flour, salt and water, and you can make them in less than 1½ hours, including the resting time of 1 hour. You can also adjust the thickness of the Udon Noodles to your liking.
Ingredients and Tools
To make 300g/0.7lb (3-4 servings) of Udon, you will need:
- 100g/3.5oz all-purpose flour
- 100g/3.5oz strong flour
- 8g/0.3oz salt – 4% of total weight of flour.
- 100ml/3.4oz water
If you happen to have medium strength flour, you can use 200g/7.1oz of medium strength flour in place of the two kinds of flour above.
In addition to the flour mentioned above, you will need extra flour or cornflour/corn starch to dust the working surface and the noodles.
The tools you will need includes:
- Flat work surface
- A rolling pin (the traditional Udon rolling pin is a thin long wooden pole, which is about 3cm in diameter). I used the normal Western-style rolling pin with handles on both sides.
- A cooking knife (preferably the blade is not too curved). The straighter the blade is, the easier you can cut the Udon.
As you can see, there is nothing special about the ingredients and the tools to make Udon Noodles.
How to make Home-made Udon Noodles
The major steps in making Udon Noodles are:
- Dissolve salt in the water.
- Add the salt water to the flour and mix well.
- Form a ball and take it out onto a flat surface.
- Knead the dough using the base of your hand for about 5 minutes. If your arm is not strong, place the dough in a large zip lock bag and step on it to knead.
- Wrap the dough in cling wrap and rest for 30-60 minutes depending on the room temperature.
- Remove the wrapping and place the dough on a work surface that is dusted with flour.
- Using a rolling pin roll out the dough, occasionally rotating it 90 degrees and dusting the dough.
- When the dough becomes 3mm/⅛” thick, fold it a couple of times so that it is easier to cut.
- Cut the dough into 3mm thick pieces.
Boiling the freshly made Udon Noodles
Be warned that the thickness of the freshly made Udon Noodles doubles when boiled. The 3mm/⅛” looks thin before boiling but you will be surprised to see how thick they become.
When boiling Udon Noodles, make sure that you use a large pot with a sufficient amount of water. In fact, this rule applies to any kinds of noodles.
Lots of boiling water will help the noodles move around freely while being boiled, preventing the noodles from sticking to each other. It also contributes to reducing the amount of salt within the noodles. The salt within the noodles comes out while boiling and the more boiling water, more salt to come out.
You need to boil the fresh Udon Noodles for about 10-12 minutes. I was actually surprised to learn that for such thin strands it takes this long to cook. But 10-12 minutes of boiling does not make the noodles sloppy at all.
When the noodles are cooked, drain and rinse well in cold water. This is very important for a couple of reasons:
- When the noodles are boiled, starch comes out and the surface of the noodles become sticky. This needs to be washed away.
- While quickly cooling down the noodles, the noodles tighten up and become chewy.
When the white bits no longer come off the noddles and the water becomes clear, you are now ready to make tasty Udon noodle dishes with the best fresh noodles (see the photo below).
Storing Home-made Udon Noodles
Nothing beats eating the freshly made Udon Noodles straight away. But you can store them in the fridge or freezer.
Divide the noodles into serving portions and place each portion in its own small zip lock bag. Store them in the fridge for up to 1 week. You can also freeze the noodles in the zip lock bag. It is best to use the frozen noodles within 1 month.
There is no need to thaw frozen noodles. Just boil them for a few minutes longer than the fresh Udon Noodles.
The best way to enjoy the freshly made Udon Noodles is to eat them cold immediately after boiling and rinsing them. Eat them just like Zaru Soba (Cold Soba Noodles) with the same dipping sauce. It is called Zaru Udon (ざるうどん, Cold Udon Noodles) actually. The best condiments for Zaru Udon are finely chopped shallots/scallions and grated ginger.
But of course, you can make Yaki Udon (Stir Fried Udon Noodles) that I posted recently as well.

- 100g/3.5oz plain flour (note 1)
- 100g/3.5oz strong flour/bread flour (note 1)
- 8g/0.3oz salt (note 2)
- 100ml/3.4oz water
- Flour or cornflour to dust the work bench and noodles

Dissolve salt in the water.

Add flour to a bowl, then add ½ of the salt water. Using your hand mix vigorously, ensuring that there are only small lumps of flour.

Add the remaining salt water to the flour and mix well. There should be no large lumps in the flour (see the photo in post).

Collect the flour bits together and make a ball in the bowl while pressing the dough, by rolling the flour from outside to inside.

When you can form a ball of dough, transfer it to a flat cooking bench sprinkled with a small amount of flour.

Knead the dough using the base of your palm. Stretch the dough, fold it, then knead to stretch. Repeat for 5 minutes until the surface of the dough becomes smooth (note 3).

Make a ball with the dough and wrap it with cling wrap. Leave it at room temperature for 30-60minutes (note 4) until the dough bounces back ⅓ of the way when poked with a finger.

Dust the work bench with flour. Take out the dough and place it on the work bench.

Starting from the edge of the dough, drop a rolling pin onto the dough to flatten it by gradually shifting the position of the pin on the dough.

Shape the dough into a square shape with round corners. Stretch the dough with the rolling pin into a large square shape by rotating the dough 90 degrees. Dust the surface of the dough from time to time.

Stretch the dough with the rolling pin into squarish shape until it becomes 3mm thick (about 25-30cm square).

Sprinkle flour over the dough (note 5) and fold it a couple of times in the same direction so that the width of the dough becomes narrow in one direction.

Place the folded dough lengthwise on a cuting board. Starting from the right edge (for the right hander), cut it to a thickness of 3mm/⅛".

After several cuts pick up noodles and toss with some more flour to prevent noodles from sticking each other.

Boil sufficient amount of water in a large pot.

Drop the noodles into the boiling water and cook for 10-12 minutes. Do not mix immediately after the noodles are put into the boiling water as the noodles tend to break.

When the bubbles start rising and get close to overflowing, add a small amount of cold water to lower the bubbles, then reduce the heat slightly so that the water is boiling vigorously.

Drain and rinse in cold water until the noodles cool down completely and the stickiness of the noodles is removed. Put the noodles in a sieve and drain well. They are ready to use (note 6).

Home-made Udon Noodles can be refrigerated up to 1 week. Boiling time of the refrigerated noodles is only slightly longer than cooking them immediately.

You can freeze Home-made Udon Noodles as well. Divide the noodles into serving portions (100g/3.5oz each for standard serving) and store each portion individually in a zip lock bag (note 7). You can freeze them for about 1 month.

Frozen noodles can be cooked without thawoing. Boiling duration will be a few minutes longer than cooking the fresh udon noodles.
1. Alternatively 200g/7oz medium strength flour to replace the mixture of plain and strong flour.
2. The amount of salt is 4-6% of the amount of flour. My salt was 4%, and when boiled, the saltiness of the noodles was noticeable.
3. The duration of kneading depends on how strong your arm muscles are and how much weight you can put on the dough. After 5 minutes of serious kneading, the dough should become reasonably smooth when formed into a ball.
Instead of using your hands, you could knead with your feet. Place the dough in a large zip lock bag, remove as much air as possible and seal. Fold a towel in half and put it on the floor. Place the zip lock bag between the towel (for hygiene reasons), then step on it with your feet. After stepping several times on the dough, roll the flattened dough into a ball and then step again.
4. The resting time depends on the temperature of the room. The warmer the room is, the faster the dough takes to reach to the right texture of the dough. I needed to rest mine for 1 hour because my room was air conditioned and cool.
5. You need to flour sufficiently so that layers of dough do not stick to each other.
6. 100g/3.5oz of freshly made Udon Noodles becomes about 170g/6oz after boiling which is perfect for 1 standard serving.
7. Alternatively, make each serving portion a flat mound and place them in an air-tight container without touching each other. Place the lid on and freeze. When they are completely frozen, you can take them out of the container and put them in a zip lock bag and store.

I only have plain flour is it ok? So this is only knead by foot? Can I use the stand mixer, ?

Hi El, It’s OK to use plain flour. The difference is that the noodles made with just plain flour is little bit softer and less elastic.
You can use a stand mixer instead of kneading by foot. But use your hands up to Step 4 in the recipe isntructions, then transfer the dough to the mixer to knead.

I made these and they were yummo! The feet kneading is genious (I couldn’t imagine kneading by hand)!
My one suggestion would be to double, triple, or quadruple the recipe. I made exactly as is, and it was pretty much just enough for 1.5 servings (we added veg and protein- tofu in my half, steak in my partners) and neither of us eat large portions.
I used “Robinhood Best for Bread” flour which had a gluten content of 13% which produced a great texture.
I highly recommend making, just make extra.

Was thinking of having my bread machine do the kneading (lazy, but it works!), then rolling, cutting, and hanging noodles up to dry.
We currently do that with ramen noodles that we regularly make. Do you also have a recipe for homemade ramen?

Hi Heather, I have never dried udon noodles but in theory I think you can. However, according to some web sites, it is not as simple as just hanging the noodles to dry. The speed of drying the noodles needs to be adjusted to avoid breakage. Firstly quick dry, then slowing down the drying process towards the end. Good luck with it!

Hi Leolani, It’s difficult to give you the exact measurements in cups but 100g of flour is 5/6 US cup, 8g salt is a bit less than 1/2 US tablespoon. 100ml water is 2/5 US cup.

Plain flour? Strong flour? Is this in reference to the percentage of protein? I have never heard of the terms “strong” flour or “medium” flour.

Strong flour, also commonly known as strong bread flour, is made from hard wheat varieties. It contains more gluten than other types of flour which gives it its elasticity and enables the dough to rise with a good structure.
